I International Exhibition Forum “Restaurant World”

The Forum was attended by official delegations sent by Committees of commodity and services market from Moscow, St. Petersburg, Nizhni Novgorod, Yekaterinburg, Volgograd, Novosibirsk.

The I-st International Exhibition Forum Restaurant World consisted of two main trends: the Exhibition and International Business-Conference “Restaurateur – 2002”

The Exhibition housed about 180 exponents: companies supplying foodstuffs, alcoholic beverages, articles of serving, equipment, automated systems, etc.

The International Business-Conference “Restaurateur – 2002”  opening the Forum welcomed Galina Fonareva, Head of Department for State Inspection of Domestic Trade and Public Catering at RF ministry of Economic Development and Trade; Mark Kaufman, Chairman of National Association of Wine and Haute Cuisine, Member of the International Academy of Viticulture; Tatyana Kunitsina, representative of RF Ministry of Labor; Elena Shramko, Director of the Art of Cookery Center “Exclusive”; Alexander Mayler, President of Russian Franchise Association; Jan White, Vice President of French Academy of Cookery Le Cordon Bleu.

During the Conference the following matters were reviewed: current state and structure of the Russian public catering market, role of the State in the sector development, forming the consumer market and others.

Twelve seminars were held within the Forum on the issues of promotion of public catering business: “Establishment and Promotion of Public Catering Chains”, “Popularization and Prospects of Sommelier Profession in Russia”, “The Specifics of Establishment of Public Catering Enterprises: Cafes, Coffee-houses”, “New Profession at Market: Barista”, etc. The especial popularity was enjoyed by seminars about the basics of establishment of wide-public catering enterprises and regional public catering enterprises. The seminars were held by representatives of most successful projects (Coffee-House  cafe network, Coffeemania cafe network, Café Ramzai restaurant chain, Group of companies Teremok – Russkiye bliny, etc.).

The Forum was ended with “Golden Scales” Awards Ceremony. The awards were given to companies for most effective cooperation with public catering enterprises in terms of fitting, construction and design. Among prize-winners were USC, Torgovy Dizain, Russky Proyekt, Proxima 77, Radius.

“Best Restaurant Supplier”  '2002 awards on the results of annual survey were given to 15 companies, including Emborg, La Mare, Global Foods, United Distributors, Whitehall, DP Trade, PR Rus, etc.

The special event of the I-st Forum Restaurant World became the Week of Haute Cuisine in Moscow arranged by “Restaurateur” magazine.

The Week of Haute Cuisine was backed up by 14 leading Moscow restaurants. Kumir, Afisha, Reporter, Nostalgie, Ki-ka-ku, Kitavasia, Crab House, Krasnaya Ploschad, Zheltoye More, Dolya Angelov, Biskvit, In Vino and Beliy Kvadrat restaurants offered their clients a menu especially elaborated by their chefs for this event. Four restaurants – Reporter, Nostalgie, Kumir, Kitivasiya provided gala-dinners prepared by famous chefs who arrived in Moscow for the Week of Haute Cuisine on invitation from “Restaurateur” magazine.

The Week of Haute Cuisine in Moscow was attended by Pierre Gagnaire, chef and owner of Pierre Gagnaire restaurant (3 stars Michelin, France); Alfonso Iakkarino, chef of Don Alfonso restaurant (3 stars Michelin, Italy); Kiyomi Mikuni, chef and owner of Oui Mikuni restaurant chain (Japan); Zhao Xiyuan, chef of restaurant at Xiyuan Hotel (Beijing, China); Enzo Dellea, Italian chef, ambassador of Italian cuisine in the World, Frederic Filiodo, chef of the French Academy of Cookery Le Cordon Bleu, Tony Gomishek, Vice President of the International Slowfood Movement; Didie Matre, pastry-chef of Pierre Gagnaire restaurant (3 stars Michelin).

For several days the above famous chefs not only prepared special gastronomic dinners in Moscow but also provided professional master-classes for Russian cooks and pastry-cooks

“World trends of national haute cuisines” conference was held in the framework of the Week of Haute Cuisine attended by Andre Kuantro, President of French Academy of Cookery Le Cordon Bleu (France); Tamara Sharova, President of Russian Association of Cooks (Russia), Toni Gomishek, Vice President of the International Slowfood Movement; Pierre Gagnaire, chef of Pierre Gagnaire restaurant (3 stars Michelin, France)

The Week of Haute Cuisine was accomplished by a gala-dinner held in the Museum of A.S. Pushkin on June 22 with a special menu by Pierre Gagnaire for 100 persons accompanied by a fashion show by Juana Rits (Belgium).
